Chicken was really good! :) We had a nice evening with dinner and watching "our show" -The Event. It is quite intriguing and always manages to keep us on the edge of our seats and watching every week.

Keith's Birthday Dinner
So today is my sweet husband's 27th birthday. So, I am attempting a new recipe. Hope it's good. Here it is:
Roasted Chicken with Rosemary
Ingredients
* 1 (3 pound) whole chicken, rinsed
* salt and pepper to taste
* 1 small onion, quartered
* 1/4 cup chopped fresh rosemary
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Season chicken with salt and pepper to taste. Stuff with the onion and rosemary. Place chicken in a 9x13 inch baking dish or roasting dish.
3. Roast in the preheated oven for 2 to 2 1/2 hours, or until chicken is cooked through and juices run clear. Cooking time will vary a bit depending on the size of the bird.
I am doing a greens vegetable mixture and harvest grains couscous from Trader Joe's. Chicken is in the oven! Hope it's good! :) I'll let you know....

Track Out so far....
Well... I saw Phantom of the Opera at NRCA (my old high school). It was quite impressive, especially from high schoolers! This was my late birthday present, well worth the wait!
Also, made a visit to the Raleigh Farmer's Market with Tricia and Kristen (&Noah)! How much fun was that! :) Got some yummy veggies and fruits too... Spinach, Tomatoes, and New potatoes.... all for $4.25! Gotta love that!
So... thus far my track-out has been fun and restful. I love just being able to hang out, get organized, and not feel the stress of school right now. I do LOVE my job, but am definitely grateful for a break every now and again!
PS... Also got to talk to these lovely lady via Skype! I miss having my sweet sister nearby! But Oklahoma is where God has her and Matt, presently

Track Out is HERE!
Well... it's here! I am officially tracked-out! :) Yay!
Things to do this week:
1) Make out of the ordinary dinners for my hubby
2) Make a run to Goodwill (to drop of some things and see if I can make someone else's trash my treasure :))
3) Spring Cleaning!
4) Do some fun crafts (suggestions are welcome!) :)
5) READ!! (FOR FUN! ** already finished book yesterday)
So... my amazing husband wanted to post and somehow blogspot deleted his post. :( He spent a lot of time writing this blog post too. Hopefully, he'll do it again.

A Sad Goodbye...
Tomorrow our family dog Jasmine will be put down, due to a cancer in her leg. Goodbye sweet Jasmine... you will be missed! : * ( Please pray for my family. She was a faithful dog for 12 years.

Let the countdown begin!
After today... 4 days left until track-out! :)
Somebody recently asked me if I still love my job... the answer is YES I do... however, I must admit that I do enjoy my track-out and my time off. I am looking forward to some time to relax, catch up on housework, and do some crafts with some friends. Suggestions?? Let me know! :)
